Helle Steinbit – 6.02″ 12C27 Mirror-Polished Fillet Blade, Curly Birch Handle, Leather Sheath – HE115

Over 30 years in continuous production — the Helle Steinbit earned its place as a Norwegian fishing classic by doing exactly one thing without compromise: delivering a razor-sharp, mirror-polished fillet blade that handles everything from river trout to open-sea catches.

The 6.02″ blade is ground from 12C27 — Sandvik’s single-layer high-chromium stainless steel, the benchmark alloy for Scandinavian fishing and fillet knives. 12C27 is optimized for a keen, fine edge that holds through wet, repetitive filleting work while resisting the corrosion that saltwater and fish acids accelerate on lesser steels. Helle polishes the blade to a mirror finish, which does more than look exceptional — a polished surface reduces drag through flesh, allowing cleaner, more precise cuts with less pressure. The long, thin fillet geometry and 10.22″ overall length give the blade the reach and flex profile serious anglers demand for larger species. The curly birch handle is hand-sanded to a satin finish specifically to draw out the grain patterns that make each handle visually unique — no two Steinbit handles look exactly alike. A hand-stitched brown leather sheath completes the package. This is a knife made by hand in Holmedal, Norway, by the third generation of the Helle family, using up to 45 manual operations per knife.
